Tomatoes that are allowed to ripen on the tree before they're harvested are the juiciest and most flavorful; most tomatoes sold in wet markets are actually picked before they're ripe and ripened with ethylene gas or in warming rooms. This will ripen the tomato from green to orange color. The texture will be harder and more chrunchy. Because vine ripe tomato is only harvested when they are ripen, naturally the texture will be softer and color will be more red.
